Breaded Aubergines
INGREDIENTS
4 Almagro aubergine centres
4 slices of streaky bacon
75 grs flour to make batter
250 ml Merlot red wine
METHOD

Reduce the red wine by half.

Cut the streaky bacon into thin slices and wrap around the aubergine centres tightly. Dip in batter and fry.

Drizzle with the red wine reduction on a plate, decorate and serve.
