Aubergines stuffed with pickled partridge salad and green apple
Ingredients
4 aubergines from Almagro
1 Pickled partridge
100 grs chinese cabbage
½ raw beet
½ spring onion
1 carrot
12 raisins
1 green apple
Watercress
Olive oil
Sherry vinager
1 taza of honey

We cut all the vegetables into fine julienne strips and reserve. Add the raisins and the boneless partridge meat, add a little olive oil, honey and vinegar, add salt.

We open the aubergines and fill with the salad. We finish with some apple sticks and accompany with some watercress shoots.
