Almagro Aubergines stuffed with Pickled Rabbit
INGREDIENTS
6 aubergines embuchadas
250 grs pickled rabbit
1 roasted red pepper
250 ml red wine vinegar
50 grs walnuts
50 grs raisins
METHOD

Marinate the rabbit, debone and set aside.

Remove the stem and leaves from the aubergines.

Cut the walnuts in half and remove the centre without breaking it.

Finely chop the aubergine pulp, the pepper and the rabbit.

Make a mixture and stuff the aubergine.

Reduce the vinegar and raisins together and soak the aubergines. Decorate the aubergines with a strip of pepper and some walnuts.
