Almagro Aubergine Spaghetti
INGREDIENTS (for 2-3 people):
Almagro aubergines
300 grs of spaghetti
2 garlic cloves
100 grs of Parmesan or grana padano
Extra virgin olive oil
300 grs of tomatoes, cherry tomatoes if possible
1 teaspoon chili powder
1 teaspoon salt
METHOD

Boil the spaghetti. Set aside.

Mince the garlic cloves. Set aside.

Grate the Parmesan cheese. Set aside.

Heat the pan with a little oil and sauté the garlic until golden.

Add the cherry tomatoes and chili. Fry for a couple of minutes.

Then add the spaghetti and continue to cook for a few minutes.

Remove spaghetti leaving the stock in the pan which will later be used to make the sauce.

Serve the spaghetti with some sauce on top.

Sprinkle with grated parmesan or grana padano cheese.
