Almagro Aubergine Pizza
INGREDIENTS
To make the dough
250 grs flour
125 ml water
25 ml oil
7 grs baker's yeast
1 pinch of salt
1 pinch of sugar
Pizza toppings
Tomato sauce
Diced bacon
Onion
Sliced aubergines
Black olives
Cherry tomatoes
METHOD

Put the flour in a bowl and add salt. Make a hole in the centre and add water, baker's yeast dissolved in a little water and olive oil.

Knead the dough until smooth and so that it no longer sticks to your hands. Leave the dough to stand for a few minutes. Preheat the oven to 180ºC.

Lightly flour a smooth surface and rolling pin. Roll the dough until flat. Place the dough on a baking tray lined with baking paper. Using a spoon spread the tomato sauce over the pizza dough. Then add cheese, diced bacon and onion. Add the aubergines, one for each slice and then the black olives.

To finish add the sliced cherry tomatoes in the middle of the pizza. Bake at 180ºC for about 15 minutes.
