Chopped Almagro Aubergine Salad

Chopped Almagro aubergine
Tomato
Different Lettuce leaves
Carrot
Corn
Pumpkin seeds
2 tablespoons of olive oil
1 tablespoon of vinegar
Pepper

METHOD

In a bowl mix the lettuce leaves, tomato, thinly sliced carrot, corn, pumpkin seeds and chopped Almagro aubergine.

Mix the olive oil, vinegar, salt and pepper to make the vinaigrette dressing.

Serving suggestion - dress the salad with the Almagro aubergine liquid. The dressing already contains olive oil, vinegar and salt.

Lastly, dress the salad with the vinaigrette.
